Upside-Down Shepard's Pie

UPSIDE-DOWN SHEPARD'S PIE
makes 4 servings
3/4 lb. new potatoes
1/2 cup water
1/4 cup Kraft Tuscan House Italian Dressing and Marinade
1 lb. extra lean ground beef
1 onion, chopped
1 cup frozen corn
1 tomato, chopped
1/3 cup 2% milk shredded Italian three cheese blend
Heat oven to 450°F. Microwave potatoes and water in 2 qt. microwavable oven proof casserole on HIGH 10-12 minutes or til potatoes are tender. Let stand 5 minutes. Meanwhile, heat dressing in nonstick casserole on medium-high heat. Add meat and onions; cook and stir until meat is browned. Stir in corn and tomatoes.
Drain potatoes; return to dish. Flatten with bottom of small cup or bowl; top with meat mixture and cheese.Cover. Bake 25 minutes or until casserole is heated through and top is golden brown, removing lid after 20 minutes.
If you don't have frozen corn, substitute frozen peas instead.
Per serving: 360 calories, 14 g fat, 29 g carbs, 4 g fiber, 270 mg sodium, 29 g protein, 5 g sugars
Note: I used Zesty Italian dressing, and substituted Ground Boca Burger for the ground beef. I made this last night and it was great!
