For some thing cheap(ish) and easy i'd start off with a cheap 325 would be good as you wouldn't lose to much if you had an off,but also you wouldn't be so stressed with having an off so you could enjoy your track time better.
Some basic costs to get you started....
325 500-750
uprated springs and shocks 250-350
Urethane bushes all round 200 ?
pads,discs,fluid 100-150
2nd hand bucket seat 50 ?
strip the interior 0 !
Total = 1100-1500 PLUS labour if you can't do all the work your self.
A roll cage and harness's would be nice as well !
If you've got a bigger budget or want to develop the car to a higher standard then you could think about fitting some Leda coil overs but they are expensive 1200(ish) !
As you say things vary so much depending on your own ideas and priorities,but hope fully i given you some ideas to start with ?

Trackday costs vary from £100 - £300 / day depending on the track and what format it is. The 325's are pretty strong and you should get a few trackdays before having to change the oil etc but the more you do it the better for obvious reasons. A good set of pads such as Mintex 1155's or 1166's should last a few trackdays as well as should the tyres.
I would allow £300 / day excl travel & fuel costs as a guide.
As for the car, depends on what you want to spend and how serious you are, you can get away with the basic mods as described above but you'll soon want to go faster and that means more upgrades and more money.

My local track is Donington,the winter rate at the mo is 115 and the summer rate WAS 140 for a full day.
Baring accident damage or your engine going bang the main cost's i think would be ;
1. track day admission- 115-300+
2. petrol- 40-80 depending on how far the track is from you and how much track time you get.
3. tyres- not sure realy,so many variables,wet or dry track,tarmac or concreat,how hard you drive the car ETC ETC ?
4. brakes- pads depending on type should last 2-4 track days,disc's depending on pads should last or be changed every other set of pads ? Fluid should be changed straight away if it boils(pedal going to the floor)and the uprated fluid should be changed a lot more regularly than normal fluid because it absorbs water quicker.
Again so many variables in how long stuff will last,please wait for one of the Seloc or Kumho racers opinions as they have got a LOT more track experiance than me !

E30DREAMER's post is pretty much spot on.
Cheap adjustable suspension will do the job fine if you're running on road tyres.
£250
New discs and pads all round. Mintex 1155 or Ferrodo DS2500 will do the job. Dont' forget new brake fluid too. Good quality standard steel brake discs are more than adequate, e.g. Brembo from German & Swedish.
£200
On such an old car you'll also need to look carefully at the cooling system. As a rule of thumb, replace all the rubber on the car - from cooling hoses to engine mounts and suspension bushes.
£300
Radiator fan viscous coupling. £30
Take a very close look at the radiator as well! £100
The last thing you want is spending out on the suspension and brakes and then cracking a head through overheating.
So budget on £1000 to get your car "trackworthy". Skip any of the above and it will come back to bite you later (at greater expense).

My 318iS track car cost me in the region of £2500 - to include new front wings and paintwork, cage, harnesses, stupid FK adjustable suspension at £650 that I would NEVER buy again, and all the brakes, bearings, bushes, braided hoses, chip, TB, etc... list goes on...
