Irish Soda Bread

Ingredients

5 cups sifted all-purpose unbleached flour

3/4 cup sugar

2 teaspoons baking powder

1 1/2 teaspoons salt

1 teaspoon baking soda

2 1/2 cups milk

2 1/2 cups dark raisins, soaked in water for 15 to 20 minutes and drained

1 stick of sweet butter (1/4 pound)

2 medium eggs, slightly beaten

Preheat the oven to 350 degrees

Makes 2 loaves.

Directions

1. Mix all dry ingredients together. Blend well. Cut butter into the and mix throughly. Add raisins and mix well.

2. Add the milk and egg mixture. Blend until completely mixed and moistened. Divide dough, smooth to shape and place in two buttered loaf pans.

3. Bake approximate 1 hour. Test doness with toothpick then remove from oven. Let sit for for 5 minutes.

Remove from pans onto wire cooling rack.
