Aside from every Nippon Ichi games I own.... (Makai Kingdom is so far a favorite right now)
I think my favorite non-Nippon Ichi game would be...
1) Final Fantasy X
2) Metal Gear Solid 3
3) Tekken 5/Soul Calibur 3
4) Guilty Gear (Any version)
5) God of War

I'd go by favorite game for each genre because you can't compare Soul Calibur with Tetris, both have ridiculous playability but just different.
Puzzle: Super Puzzle Fighter II Turbo (PS)
Fighting: Super Smash Bros. (N64), Tekken 3 (PS, just because of Gon)
or anything Capcom
Beatemup: War of the Monsters (PS2)
or Knights of the Round Table (SNES)
Shooter: Rez or Raiden II but if I actually owned it Ikaruga
FPS: UT2004, Half-Life 2
Platformer: Castlevania: SOTN (PS) though I hear the Saturn one is better, Klonoa 2: Lunatea's Veil for classic platforming, Sonic and Knuckles
Adventure: Zelda: Ocarina of Time (64), Kingdom Hearts (2 once I get it)
Mech: Armored Core: Nexus (PS2)
Racing: Midnight Club Racing 3: Dub Edition Remix or any Need for Speed, Mario Kart (any)
Sim: The Sims
Stealth: Metal Gear Solid 3: Subsistence
TBS: Final Fantasy Tactics (PS), Tactics Ogre: Knights of Lodis (GBA), Heros of Might and Magic 2
RTS: Command and Conquer: Red Alert, Starcraft
Card/Board Game: Culdcept (PS2) (like there's any other choice)
