Let's COOK Somethin' Good
CAMPER'S CHILI
Make a hearty chili following precooking the ground beef. Ready-to-add canned extras are all that's needed.
Prep Time:20 min
Start to Finish:20 min
Makes:6 servings
1 lb lean (at least 80%) ground beef
1 tablespoon dried minced onion
1 teaspoon salt
1 can (15 oz) Progresso® kidney beans, undrained
1 can (10 3/4 oz) condensed tomato soup
1 soup can water
2 to 3 teaspoons chili powder
1. In 2-quart saucepan, cook beef, onion and salt over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2. Stir in remaining ingredients. Heat to boiling, stirring occasionally.

SPICY CHICKEN CHILI
Prep Time:5 min
Start to Finish:20 min
Makes:4 servings (about 1 1/4 cups each)
1 pound boneless skinless chicken breast, cut into 3/4-inch pieces
1 can (14 1/2 ounces) salsa-style chunky tomatoes, undrained
1 can (15 ounces) spicy chili beans in sauce
1/2 cup shredded Cheddar cheese (2 ounces)
1. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook chicken in skillet 3 to 5 minutes, stirring frequently, until light brown.
2. Stir in tomatoes and beans; reduce heat to medium-low. Cook uncovered 8 to 10 minutes, stirring frequently, until chicken is no longer pink in center. Sprinkle each serving with cheese.

On the chili, the can of tomato soup lost me. I use tomato sauce. No green pepper or garlic. You missed the taste train Paw.

Best Ever Blueberry Cobbler
Cook Time: 40 Minutes Ready In: 1 Hour
Yields: 6 servings
"To make this judiciously sweet cobbler, blueberries are lightly sugared and flavored with orange juice, and then topped with a light and airy batter. And within 40 minutes, this cobbler bakes up bubbly and beautiful."
INGREDIENTS:
3 cups fresh blueberries
3 tablespoons white sugar
1/3 cup orange juice
2/3 cup all-purpose flour
1/4 teaspoon baking powder
1 pinch salt
1/2 cup butter, softened
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla extract
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
3. In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
4. Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.

Caramel Apple Bars (Cookie Mix) Caramel Apple Bars (Cookie Mix)
Bake the irresistible combination of caramel and apples in an easy cookie mix bar.
Prep Time:15 min
Start to Finish:2 hr 55 min
Makes:36 bars
1/2 cup cold butter
1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1 egg
1 cup finely chopped peeled apple
3/4 cup caramel topping
1/4 cup Gold Medal® all-purpose flour
1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, cut butter into cookie mix using fork or pastry blender. Stir in egg until mixture is crumbly.
3. Reserve 1 1/2 cups cookie mixture. Press remaining cookie mixture into bottom of pan. Bake 15 minutes. Sprinkle apple evenly over crust. In small bowl, mix caramel topping and flour; drizzle over apples. Sprinkle reserved cookie mixture over apples.
4. Bake 20 to 25 minutes or until golden brown. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows.
High Altitude (3500-6500 ft): Heat oven to 375°F. In step 4, bake 23 to 28 minutes.

Berry Cheesecake in Chocolate Crust
A basic cheesecake becomes divine when you add a chocolate cookie crust, orange peel and your favorite berries.
Prep Time:30 min
Start to Finish:9 hr 5 min
Makes:16 servings
2 cups chocolate wafer cookie crumbs
1/4 cup butter or margarine, melted
4 packages (8 ounces each) cream cheese, softened
2/3 cup sugar
1/2 cup sour cream
1 tablespoon grated orange peel
4 eggs
1/2 cup sour cream
2 tablespoons sugar
2 cups berries
1. Heat oven to 325ºF. Mix cookie crumbs and butter. Press on bottom and slightly up side of ungreased springform pan, 9x3 inches, to seal bottom.
2. Place cream cheese, 2/3 cup sugar, 1/2 cup sour cream and the orange peel in food processor. Cover and process until smooth. Add eggs. Cover and process until well blended. Spread over crust.
3. Bake about 1 hour 20 minutes or until center is set. Cool on wire rack 15 minutes. Run metal spatula along side of cheesecake to loosen; remove side of pan. Refrigerate uncovered 3 hours; cover and continue refrigerating at least 4 hours.
4. Mix 1/2 cup sour cream and 2 tablespoons sugar; spread over top of cheesecake. Top with berries.

Luscious Layer Bars (Cookie Mix)
Indulgent homemade bars are in the oven in 10 minutes thanks to a quick layering technique.
1 pouch (1 lb 1.5 oz) Betty Crocker® chocolate chip cookie mix
1/2 cup butter or margarine, softened
1 egg
1 cup butterscotch chips
1 cup milk chocolate chips or semisweet chocolate chips
1 cup flaked coconut
1 cup chopped walnuts
1 can (14 oz) sweetened condensed milk (not evaporated)
1. Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
2. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan using floured fingers.
3. Bake 15 minutes. Sprinkle with butterscotch chips, chocolate chips, coconut and walnuts. Drizzle evenly with condensed milk.
4. Bake 30 to 35 minutes or until light golden brown. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows.

Spicy Taco Salad
Spice up your taco salad with this special recipe that has a pasta twist.
1 pound lean ground beef
3 2/3 cups hot water
1 package Hamburger Helper® chili macaroni
3 teaspoons chili powder
1/2 teaspoon dried oregano leaves
1/4 teaspoon red pepper sauce
1 large garlic clove, crushed
1/2 teaspoon ground cumin, if desired
1/8 teaspoon ground red pepper (cayenne), if desired
6 cups shredded lettuce
2 medium tomatoes, chopped (1 1/2 cups)
1 medium green bell pepper, chopped (1 cup)
1/3 cup sliced green onion
1/4 cup sliced ripe olives
1 can (4.5 ounces) Old El Paso® chopped green chiles, drained
1. Cook beef in 10-inch skillet over medium-high heat, stirring occasionally, until brown; drain.
2. Stir in hot water, uncooked Pasta, Sauce Mix, chili powder, oregano, pepper sauce, garlic, cumin and red pepper. Heat to boiling, stirring occasionally.
3. Reduce heat; cover and simmer 15 minutes, stirring occasionally. Uncover and cook 5 minutes longer. Cool 5 minutes.
4. Mix remaining ingredients in large bowl. Add beef mixture; toss. Serve immediately or, if desired, cover and refrigerate at least 4 hours until chilled.

Cantaloupe Butter (Brought from below)
Remove rind and seeds. Cut in small pieces. Use enough water to keep from sticking and boil till soft. Run through a sieve.
Measure 1 quart cantaloupe to 1 1/2 cups sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon and boil till thick.
Pour into jars. Process in hot water bath for 20 minutes
