Edwardian Cuisine

Does anyone know of, or have menus regarding what people ate in that era? I'm very curious to know, and if you have recipes - please post them!
Thank you! emoticon

Re: Edwardian Cuisine

A fine question. The Titanc's time was the Edwaridan Era, I will list dishes from the Titanic's dining menu which were popular among passengers and people of that time.

Lunoheon

Conbommé Fermier

****ie Leekie

Fillets of Grill

Egg a l'Argenteuil

Chicken A La Maryland

Corned Beef, Vegetables, Dumplings

From the Grill

Grilled Mutton Chops

Mashed, Fried and Baked Jacket Potatoes

Pastry- Custard Pudding, Apple Merinque, Pastry (Such as Eclairs and Icecream)

Buffet

Salmon Mayonnaise

Potted Shrimp

Norweigen Anchovies

Plain and smoked sardines

Roast Beef

Round or Spiced Beef

Virgina and Cumberland Ham

Galantine of Chicken

Corned Ox Tounge (Eww..)

Viel and Ham Pie

Lettuce, Beetroot, tomatoes

Cheeses

Chebhire Stilton

Chedder

Edam

Camembert

St. Ivel

Roquefort

This is the Main Saloon Basics. Keep in mind you would receive many courses. The A La Carte was much more ornate providing:

First Course

Hors D' Oeuvers
Oysters

Second Course

Consommé Olga Ceam of Barley

Third Course

Poached Salmon With Mousseline Sauce, Cucumbers

Fourth Course

Fillet Mignons Lili

Saute of Chicken, Lyonnaise

Vegitable Marrow Farci

Fith Course

Lamb with Mint sauce

Roast Ducking Apple Sauce

Sirloin of Beef Chateau Potatoes

Green Pea, Creamed Carrots, Boiled Rice

Parmentier and Boiled Potatoes

You get the Idea, there are a few more courses, however they deal with deserts and cheeses, as well as the popular wine with bread. I'm no cook but there are some ideas.

Hmmm. My-o'-my, what does a dyed-in-the-wool vegetarian (who neither eats meat, fish, nor fowl) eat on those menus? :brow: emoticon

There are a few things you could eat.
some of these may not be edible for you if you dont eat eggs, gelatine or dairy products..
Vegetable Marrow Farcie, Chateau Potatoes, Minted Green Pea Timbales ,Creamed Carrots, Boiled Rice, Parmentier and boiled new Potatoes, Punch Romaine, Cold Asparagus salad with champagne-saffron vinaigrette, Celery,
Waldorf pudding, Peaches in Chartreuse Jelly
Chocolate Painted Eclairs with French vanilla cream
French Vanilla ice cream
Assorted fresh fruits and cheeses

I wonder if there were many vegetarians in the Edwardian era?

Jews (such as the Strauses, Ida & Isador) we know, are kosher, and Seventh-Day Adventists are well-known for being vegetarians...I should know, because the latter is what my religious demonination once was. I'm now a Southern Baptist (as is Will, for he too, attends church with me...he has such an sweet way of letting me know his invisible spiritual presence is there with me every Sunday).emoticon

Now that you've listed here the foods I "can" eat, Bess...I can see that I wouldn't starve after all. emoticon

Thank you for listing them. :heyy:

That is an interesting thought. of course as Jews, The strausses could eat some meats, but on Titanic it is highly unlikey that the meat was slaughtered or prepared correctly according to Jewsish law. So i guess they too were limited tot he vegatarian options.
..well, i hope that made some sense ha ha.

Yes, you did. For it makes perfectly good sense to me too. I guess, that the Strauses were the "only" First Class passengers, whom were completely vegetarian eaters aboard Titanic. I am quite sure that they carefully went over the menus, before deciding which was kosher enough for them to eat, when placing their order(s).:heyy: :P

I would, as a fellow vegetarian, without a shadow of a doubt hang out with them.emoticon

Re: Edwardian Cuisine

I think that food sounds like it would be good. I love chateau potatoes, and Lamb with Mint sauce sounds interesting. I could never survive as a vegetarian. However, I do remember Cal in the 1997 Cameron Titanic movie, ordering the Lamb with "very little mint sauce" in the Verandah Café.
